Installing Doom and a map editor on Ubuntu is very easy. The Eureka map editor and Prboom is a very good combination.
Install prboom, freedoom and the eureka map editor easily with one command.

Install Gzdoom easily if you wish to use Brutal Doom or Russian Overkill.

Install the classic Doom Shareware version if you wish to play the first episode of Doom, plus a nice 3D acellerated version of Doom for very nice graphics.
